Spatchcock Chicken

A spatchcocked chicken has been "butterflied" or spilt up the back, allowing it to lay flat. Doing this reduces the cooking time significantly and allows the whole bird to be cooked in different ways, such as grilling or pan frying. Give it a try, you won't be disappointed.
